THE CHEF

Roberto Bottero

Roberto Bottero is currently the chef at the Arnaldo Gastronomic Clinic in Rubiera. Born in Modena in 1966, the grandson of Arnaldo Degoli, after a degree in Economics and Commerce and years of experience as a professional sommelier, he chose to follow in his family's footsteps and preserve the Emilian tradition. But the success of the Gastronomic Clinic - more than the conventional types of catering - divides its merits with several key figures: from the rezdore who prepare the cappelletti in the morning to the wait staff for trolley service.

The women

Not just women of the house, but true points of reference for the community as well.

Throughout the history of the Gastronomic Clinic there have been female figures of reference, who have been the 'Rezdore' of the ancient walls of the Hotel Aquila D'Oro in which the Gastronomic Clinic is also located.

Not only women of the house, but also true points of reference for the community, who open their days by rolling out fresh pasta for the arriving travellers; even now, as in the days of Lina, Arnaldo Degoli's beloved wife.
