Roberto Bottero is currently the chef at the Arnaldo Gastronomic Clinic in Rubiera. Born in Modena in 1966, the grandson of Arnaldo Degoli, after a degree in Economics and Commerce and years of experience as a professional sommelier, he chose to follow in his family's footsteps and preserve the Emilian tradition.
But the success of the Gastronomic Clinic - more than the conventional types of catering - divides its merits with several key figures: from the rezdore who prepare the cappelletti in the morning to the wait staff for trolley service.
